Great snack option for a mid-afternoon playdate with friends. These simple cottage cheese, kale, and bacon egg bites are sure to become a staple in your recipe arsenal.
Our happy hens are happily laying again after a much needed break during the winter months. With the increase in sunshine on the farm, we have found ourselves collecting more eggs than we have room for. So, I have been experimenting with more ways to eat them fresh, along with utilizing the previous ways we have already been storing them for long-term consumption.

WHAT ARE EGG BITES?
Egg bites are a simple twist on a classic quiche or frittata. Only in miniature form, making this customizable recipe easy to make. Because of its versatility and simple basic ingredients, this is a favorite grab-and-go breakfast or snack.
You can add different combinations of protein and veggies to make these tasty little fluffy muffins a delicious treat for school, brunch, the office, or on the way to the gym.
WHY I LOVE THIS RECIPE
- DELICIOUS AND EASY- Blend and place in oven and have time to get ready for the day, start a load of laundry, or unload the dishwasher while these beauties bake.
- GREAT WAY TO USE UP EXTRA EGGS- Spring and summer months are our prime time for our hens to lay more eggs than we know what to do with.
- ADD MORE PROTEIN- Along with the number of health benefits eggs provide, the addition of the cottage cheese adds more protein which is essential for building and repairing muscles and making hormones and enzymes in our bodies.
- ENDLESS COMBINATIONS- Use this simple egg bite recipe as a starting base. Change out the bacon with sausage or ham, or omit the meat all together and make it a veggie version. Swap the kale with spinach or roasted bell peppers. Even the cheddar cheese can be replaced with feta for a more Mediterranean flavor.
EGG BITE INGREDIENTS
HERE’S WHAT YOU’LL NEED TO MAKE THIS EGG BITE RECIPE:
- Eggs- 7 to 8 medium to large eggs
- Chopped cooked bacon bits- a great way to use up leftover bacon
- Cottage cheese- when blended, it adds another level of flavor and helps add to the fluffy consistency
- Shredded cheddar cheese- everything tastes better with a little shredded cheese
- Kale (fresh or frozen)- a great way to sneak in more veggies into picky eaters’ diets
- Italian seasoning– a major staple in our kitchen
- Garlic powder- we use fresh garlic often, but I always like to add more garlic flavor with organic garlic powder
- Himalayan sea salt- contains many minerals that the body needs to function (ie. sodium, magnesium, potassium, and calcium)
- Black pepper to taste- fresh ground peppercorns are the best for adding a little bit of spice without overpowering the end result of flavors

- Baking sheet- I switched our old Teflon coated ones for these stainless steel ones here.
HOW TO MAKE SIMPLE COTTAGE CHEESE, KALE, AND BACON EGG BITES

Simple Cottage Cheese, Kale, and Bacon Egg Bites
This simple grab-and-go breakfast option, with its fluffy texture and rich flavor, will be a satisfying addition to your busy morning or afternoon snack routine.
Ingredients
- 7-8 medium to large eggs
- 3/4c chopped cooked bacon bits
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1/2c kale (fresh or frozen)
- 1/2 tsp Italian seasoning
- 1/2 tsp garlic salt
- Himalayan sea salt & black pepper to taste
Instructions
1. Pre-heat oven to 325 degrees.
2. Prepare muffin tins with butter or coconut oil.
3. Crack eggs into a blender. Add cottage cheese, herbs, salt & pepper. Blend together, but do not. over blend.
4. Chop bacon into small bite-sized pieces.
5. Shred cheese. Set aside.
6. Pour blended mixture into muffin pan, about 3/4 full.
7. Add bacon, kale into muffin pan cups & top with cheese.
8. Place in oven and bake for about 22-24 mins (may vary with different ovens & altitude) until slightly golden brown and tooth pick comes out clean.
9. Remove from muffin tin & place on cooling rack to prevent overcooking in pan.
Notes
- Best served when hot.
- Great for making ahead.
- Add more or less of the seasoning to your family’s liking.
- This recipe is extremely customizable.
- Place in airtight container and store in fridge for maximum of 3 days.
- Store in ziplock freezer bag and place in freezer for up to 3 months.
- Reheat leftover egg bites in air fryer or in oven until warmed all the way through.
TIPS
- So simple, you can make ahead
- Store in refrigerator or freezer (These keep well in an airtight container in the fridge for up to 3 days, up to 3 months in the freezer in a ziplock freezer bag)
- Great reheated in an air fryer for a grab and go breakfast
- Use non-toxic non-stick muffins pans
- Blend cottage cheese along with eggs and spices to make the end result fluffy and light
- Do not over blend
- Sauté veggies to cook off some of the excess moisture before sprinkling into muffins pans
